Basil & Oregano Pasta Salad

Today I will be sharing my first blog post! First I would like to tell you a little about myself, and this blog.

I have been wanting to start a food blog for a while, but until now I have not put actions toward this. You will find recipes, do-it-yourselves and other topics here that are all tested, and family approved! So, now to the salad...

This recipe is perfect for times when you don't want to spend a lot of time in the kitchen, and is very suitable for the weather we have been having in the summer!

 

Ingredients:

9-12 Fresh Basil Leaves

8-15 Fresh Oregano Leaves

2 cups of Penne pasta

Scant 1/3 cup of oil (Scant = Just under), plus extra, for pasta

1 Clove of Garlic

1 cup of Mixed Vegetables, Chopped (I used carrots, broccoli, and beans)

Directions:

1. Cook penne pasta according to the directions on box. Strain and toss lightly with oil so the pasts does not stick.

2. Pile basil leaves and oregano together and finely chop. Make sure leaves are dry as the oil will slide off if they aren't. Add leaves to a bowl with the oil and stir.

3. Mash garlic. Add to oil mixture. Let sit. Adjust to taste.

4. In a large Separate Bowl combine pasta and vegetables. Toss, then add in dressing and toss.

5. Serve in a salad bowl as a main dish.

Serves 5. Can be refrigerated.

Note: If using olive oil, let sit for 5-15 minutes before serving.
